Got this recipe via a close friend. This recipe is light, less sweet and the crust's main job is to melt in your mouth. Thumbs up!

**Edited: Matcha, Honeydew and Durian Snowskin Mooncakes

My first attempt of making snowskin mooncakes~! 





This is durian filling. I bought all fillings from Kwong Cheong Thye. Check them out!

Lychee layered cake

Lychee cake's method and ingredients adapted by Dreamers Loft.

Ingredients:
  • 250g of cake flour
  • 2.5 tsp of baking powder
  • 1/4 tsp of sea salt
  • 135g of unsalted butter
  • 220g of caster sugar
  • 3 egg whites
  • 225g of fresh milk
  • 1 tsp of lychee essence
*I've omitted out the food colourings.

Method:
  • Preheat oven at 175 degree celsius.
  • Grease the baking pan with spraying oil or butter; OR  line with parchment paper.
  • Sift cake flour, baking powder and salt together and set aside.
  • Cream butter and sugar till light and fluffy
  • Add 1/3 of egg white at a time till all are well incorporated.
  • Then add 1/3 of sifted flour mixture with baking powder+salt at a time , interchanging with fresh milk.
  • Add lychee essence and incorporate well.
  • Do make sure you weigh the batter and divide evenly into the baking pan.
  • Bake at 175 degree celsius for 12 - 13 min (I baked at 170 for 12 min for each layers weighed at 131g
  • Let it cool before removing the cake from the baking pan.

Optional: I've mixed in my homemade lychee puree (drain away the juice) into the fresh whipped cream.

To assemble the cake:
  • I used two cans of lychee.
  • Frost 1st layer of cake with fresh cream,
  • then sliced the lychee into halves or three pieces and lay them on top of the fresh cream nicely.
  • coat the layered cake with lychee with fresh cream evenly, and cover it with 2nd layer of the cake;
  • Repeat the steps.

Nutella layered + swirled peanut-butter bread

Method and ingredients adapted by Averie Cooks.

Ingredients:

  • 1 large egg (I used 2 eggs)
  • 108g of buttermilk
  • 1/2 cup of light brown sugar (I used muscovado dark brown sugar at 70g)
  • Heaping 1/3 cup of creamy peanut butter
  • 1/4 cup of caster sugar
  • 1/4 cup of canola oil
  • 1 tablespoon of vanilla extract
  • 1 1/2 cup (174g) of all purpose flour
  • 1 tsp of baking soda
  • pinch of salt (optional)
  • about 2/3 cup of Nutella for layering inside the loaf
  • about 1/4 cup of Nutella for swirling on top the loaf (I bought a big jar of Nutella and scooped as per needed)

Method:
  • Grease your 9"x 5" loaf pan and set aside.
  • Preheat your oven at 175 degrees celsius.
  • Incorporate all the first 7 ingredients listed above (I used a stand mixer with a paddle)
  • Add the sifted flour + baking soda + salt (optional) bit by bit until well incorporated.
  • Mix well and do not overmix (Batter will be slight lumpy and do not attempt to smooth the lumps)
  • Pour 2/3 of the batter to the greased loaf pan.
  • Spread the nutella evenly on top.
  • Pour the remaining 1/3 of the batter on top of nutella.
  • Spread (or drizzle) three strips of nutella and you are ready to bake. (You may make other patterns as your wish)




The swirl is more significant at the center of the loaf

Re-cap

I'm trying to re-cap some of recipes that I'd done at 1.5 years ago.. :) Say like rainbow cake, carrot cake and lastly waffles.

Not sweet waffles

Method and ingredients adapted from All recipes.

If you notice the quantity of the sugar, it only calls for one tablespoon of sugar; so I concluded this is a pretty healthy waffle recipe. I'd substituted 3/4 cup of buttermilk instead of all full cream milk. Buttermilk does make the waffles puffy or fluffy should I say. :)

Serve it while hot. It's super crispy!

Fluffy's 1st Pawday cake!

Method and ingredients adapted from Gone to the show dogs.

Here's the ingredients:
  • 1 egg
  • 1/4 cup peanut butter
  • 1/4 cup cooking oil
  • 1 teaspoon vanilla extract
  • 1/3 cup honey (optional)
  • 1 cup shredded carrots
  • 1 cup whole wheat or white flour
  • 1 teaspoon baking soda
Method:
  • Preheat Oven to 350. Combine the egg, peanut butter, oil, vanilla, and honey (if you use it) in a large bowl, and blend it together. 
  • Stir in Carrots, then slowly add Flour and baking soda. Mix until thick. Spoon into greased round cake pan. 
  • Bake for 40 mins at 350. Then leave in pan for 10 mins after removing from the oven. Them move to a cooling rack. 
For frosting:
  • 1 8oz Package of Cream Cheese
  • Dash of Cinnamon
  • Splash of Vanilla Extract
  • A squirt of Honey
